This apple bread is delicious and sugar free! We found ourselves with an abundance of apples this season so I canned applesauce, and apple pie filling, and apple cider and made this yummy bread with the rest. Actually, I made several loaves of the bread and processed and froze a bunch of apples so I can make it in the coming months.
Ingredients
1 ¾ cups organic AP flour (I love Einkorn from Jovial Foods!)
1 ½ tsp baking powder
1 tsp ground cinnamon
½ tsp baking soda
½ tsp salt
1 cup grated apple
1 cup diced apple
⅓ cup melted coconut oil
½ cup maple syrup
2 room temperature eggs
½ cup plain Greek yogurt
½ cup applesauce
1 tsp vanilla extract
*Make it hardier by adding nuts or seeds! Walnuts, pecans, pumpkin seeds, etc.

Preheat the oven to 425 degrees Fahrenheit. Grease loaf pan or line with parchment paper.
Mix flour, baking powder, cinnamon, baking soda, and salt in a large bowl. Mix until well combined. Add grated apple (if dripping, squeeze out some extra juice) and diced apple. Stir to combine.
In a separate bowl, whisk together the oil and maple syrup. Add the eggs and beat well. Add yogurt, applesauce and vanilla and mix well.
Pour the wet ingredients into the dry and mix with wooden spoon just until combined.
Pour into prepared loaf pan.
Bake 45 minutes until golden on top.
Cool and enjoy!
